Ok so I've been obsessed with trying to make these Tiramisu Pancakes that I saw on Pinterest (first made on the amazing Ivory Hut blog).  If you want to make it the real way, make sure to check out her blog - her pictures are outstanding and put mine to shame, but there are so many great recipes to be inspired by.

To be honest, the decision to recreate these pancakes has spurred from nothing more than just a craving and a bit of laziness.  I'm a big fan of tiramisu - it could be one of my favorite desserts AND I'm a big fan of breakfast - so marrying the two was a no brainer (and genius I may add).  In addition, I'm an even BIGGER fan of making recipes easier for me to follow (because I'm not really a cook or a baker - I just LOVE to eat - see previous macaron post here).  So here's my quick Tiramisu Pancake recipe!  It seriously only took a couple of minutes to prep and maybe 5 minutes of cook time.

and some cocoa powder of course :)

Here are the ingredients:

  • 1 Shake 'n Pour easy Bisquick mix (makes about 6-8 little pancakes)
  • 1 shot of espresso (thanks to my sis, I have this cool CBTL machine that pops out espresso shots in no time)
  • Water
  • Mascarpone Cheese (I found this special Tiramisu flavored one at the grocery and thought it was perfect)
  • Cocoa Powder
  • Syrup (what's a pancake without syrup?)

Follow the instructions on the container - it says you need 2/3 cup water so I just added the shot of espresso first and filled in the rest of the measuring cup with water.  Shake and you're ready to go!  The thinner the pancake the better so you can easily stack them.

On top of each pancake layer, spread a thin layer of syrup (or a thick layer if you really want to - and hey, I won't judge if you won't) :)  Next, add a layer of mascarpone cheese.  Add as many layers as you like and top it off with a sprinkle of cocoa powder and you're done!
